Chinese style Mushroom and Cashew nut Stir-Fry

A vegetarian chinese dish, made with mushrooms, spring onion, yellow pepper, green beans, chopped spinach, cashew nuts, and slices of courgette (a good substitute for bamboo shoots). Plus chopped chili, garlic and root ginger. Marinaded in some white wine and fish sauce (Nam Pla) for about six hours before being stir fried. Served with boiled basmati rice.
