Strawberries and Walnuts
Fabulous strawberry and walnut salad. The strawberries were diced and covered with a few shakes of demarara sugar and a single shake of white pepper. Then placed in the fridge overnight. Decanted to a serving bowl with the juices. The walnut pieces were added, plus a generous coating of single cream.

Strawberries, Sweet Sherry, and Single Cream
The strawberries were chopped up to increase their surface area, before being dusted with demerara sugar. Left in the fridge to allow the strawberry juice to come out of the strawberry pieces. Stirred occasionally until all of the sugar was dissolved in the strawberry juice.
Soused in a little sweet sherry, and then decanted into a bowl of single cream.

Strawberries and Cream, plus Bourbon Whisky
A simple fruit salad made from 500g of fresh British strawberries from the customer counter at the local Co-op (they had a glut).
The strawberries were soused in a mixture of demerara sugar plus a generous glug of Bourbon whiskey. Allowed to stand in a glass bowl for a couple of hours, stirring together occasionally. Park the bowl in the fridge if you intend to eat the strawberries the next day.
Add a couple of dashes of finely ground white pepper before serving (the way it is done here). Dress in fresh single cream. Fabulous!

Strawberries in Bourbon, with Walnut pieces and Single Cream
A fruit salad, with halved strawberries and Kentucky Bourbon whiskey, plus some white wine (Soave). Allowed to marinate for a few days in the fridge. Served with walnut pieces and single cream.

Strawberries in Chocolate Ice-cream
An excellent dish, made with simple ingredients. 150g of strawberries were halved, and dressed in 100g of sugar. Left in the fridge overnight, under glass. After which the juices from the strawberries is largely extracted.
Add some black pepper to the strawberries (a Scottish affectation which works really well). Stir.
Served with several spoonfuls of chocolate ice-cream, cold (in this case Luca ice-cream, which is the best in this part of the world)..

Spanish Cherry and Scottish Strawberry Fruit Salad
A delicious dish which is easy to make, and which will keep in the fridge. I topped the strawberries (400g) and cut them into four slices each. They were placed in a glass bowl and covered with two dessert spoonfuls of granulated sugar. They were then soused in a wineglassful of white Soave wine (any decent white wine will do). Stirred until the sugar dissolved.
Stone the cherries, and cut them into halves, making sure that the stalks are removed. Add to the bowl of strawberries, and stir together thoroughly. Cover the bowl and place in the fridge until required.
Serve the dish cold with its juices, with two dessert spoonfuls of Greek style yoghurt. A joy to eat!
