King Prawns in a Lime and Tomato salsa


The rice for this dish was prepared first. A small handful of Thai black rice was boiled for twenty minutes, then drained and set aside. Basmati rice was cooked in a little turmeric at a low heat for about half an hour (the black rice was added after ten minutes), until most of the water had been soaked up, and the rice grains became stuck together (easier to eat rice with chopsticks that way).. 

The lime and tomato salsa was made with arrowroot, water, tomato puree, a pinch of turmeric, and a teaspoonful of lime pickle (a squeeze of lime juice would do just as well). I also added a red finger chilli for heat, and a pinch of basil. Simmered for ten to fifteen minutes until the salsa thickens.

The rest is easy. 140g of Nicaraguan King prawns were steamed for about seven minutes. I cut a quarter of a red pepper into strips, and diced a purple onion. The dish was assembled with a  lettuce salad. The prawns were added, and dressed in the salsa before serving. Delicious!

Chorizo Salad with Black Olives and Green Pepper

A chorizo salad, made with black olives, diced onion and spring onion, boiled potato cubes boiled with a little turmeric, one green pepper cut into strips, one deseeded and diced red chilli, diced vine tomato, and a dessert spoonful of olive oil.

Plus a bistro salad of green and purple lettuce as the base of the dish. Drizzle with a little lime juice.

Serve dressed with freshly ground black pepper.

Coconut, King Prawns, with Sweet Potato noodles


Coconut, lime Leaves, lime juice, and King Prawns.Thai style king prawns from Vietnam.

A  prawn dish which was intended to be consumed as part of an Asian salad with Asian pickles. I chose to make them the focus of a stir-fry.

The prawns were heated in a steamer for about ten minutes.

The noodles were made with sweet potato and onion. The noodles were spiralised sweet potato, and onion, and stir-fried in a pan at medium heat, along with two small carrots, grated and sliced red pepper. The noodles, carrot and sliced red pepper were decanted onto a plate with a spiral of dark soy sauce.

Ready in fifteen minutes at a medium heat. Stirred frequently to prevent burning. Delicious!
