Fried Prosciutto ham with hash browns


 Prosciutto ham is dry-cured, so there is no need to cook it. But it is delicious with some delicate cooking, till on the edge of being crispy. The hash-browns were cooked in a separate pan at a medium heat until slightly browned. The prosciutto ham was cooked with the red pepper slices  (added much later).

Smoked Bacon, Beans and Chestnut Mushrooms


 A great weekend breakfast of smoked bacon, fried chestnut mushrooms, and baked beans. The bacon and diced mushrooms were cooked in the same skillet, half the time under glass at a medium heat, for just over twenty minutes. With a little olive oil. The bacon was turned a couple of times. Served with some ground white pepper.

Mustard ham, Egg and chips


 Sainsbury's used to do a decent ham, egg and chips, but they seem to be outsourcing their restaurant facilities. This is not a difficult meal to make for yourself, even if you haven't got a deep fat fryer. I chipped some potatoes and soused them in a little vinegar, salt, and some rapeseed oil for half an hour while the oven was heating up. Spread across a roasting tray and cooked for about forty minutes at 180 deg C. (watch progress by eye!). The egg was cooked in a skillet on the hob.

Lorne Sausage, with Spiced Beans and Peppered Chips


 Great Sunday breakfast, based around two slices of Lorne Sausage. One sliced tomato and five mushrooms were cooked in the same skillet. 

The peppered potato chips were roasted in the oven, after being dressed in some olive oil. Cooked from scratch in about 40 minutes. The beans were cooked on the hob for about ten minutes, after the addition of the herbs and spices. The entire dish was added to some diced spinach leaves. 

Delicious! That's about as good as it gets with Lorne Sausage. Much better than just serving it with fried eggs.

Poached Egg with fried Wheat-free bread


 Egg poached in water inside a silicon container. Ten minutes, half under glass. The bread was drizzled in olive oil and browned in a skillet. Delicious.

Smoked Ham Offcuts with Egg and Potatoes


Bargain smoked Ham offcuts from Aldi, served cold, with fried egg and boiled semi-skinned potatoes. The egg was cooked in a little rape seed oil. Dressed in freshly ground black pepper.

Torunska sausage and Mushroom breakfast


 Diced mushroom and a quarter of a red pepper, a couple of spring onions, plus sliced Torunska sausage. About twelve minutes to cook in a small pan. Served with a baby leaf lettuce salad.

Smoked Bacon, Baby Plum Tomato, and Spring Onion Breakfast


Great breakfast, which is simple to prepare. Baby plum tomatoes, diced into three pieces, halved button mushrooms,and spring onion, cooked slowly in a skillet for 25 minutes in some sunflower oil. Stirred frequently. 

The cured and smoked bacon was also cooked slowly, but in another smaller pan, until it was on the edge of being crispy. 

The chipped potatoes were parboiled for ten minutes, and then grilled in the oven with a little sunflower oil until browned (turn once). Watch progress by eye. Served with tomato ketchup.

Lorne Sausage Breakfast


 Two slices of Lorne Sausage, cooked slowly in sunflower oil under glass, and turned once. Cooked alongside julienned white onion, and quartered Moroccan tomatoes. Cooked for twenty minutes all told. Dressed in freshly ground black pepper.

Bacon, Egg and Hash Browns


Simple and delicious brunch, with pan fried hash browns, fried bacon, and fried eggs, served with black pepper, a pinch of salt, and American mustard. 

The hash browns were cooked in a small pan for twenty five minutes at a low to medium heat, in sunflower oil. Watch carefully, and turn occasionally. 

The bacon came from a pack of cooking bacon. Normally these consist of rashers which didn't quite make the aesthetic grade, but what I was working with was a solid block of bacon. I cut it up with a serrated knife. Fried slowly for half an hour, the last fifteen minutes of which were under glass. 

Eggs cooked for five minutes at a lowish heat in the bacon fat, and dosed with a pinch of salt.

Prosciutto and Mushroom Breakfast


Prosciutto is an Italian pork preserve, so is not normally found in a frying pan. But you can gently fry it, which is what I did here. Along with diced mushrooms, and an egg. Simple and delicious. Could be served with hash browns.

Chorizo, Onion and Baked Bean Breakfast

I chopped up a quarter of a chorizo ring, and fried the sausage in an omelette pan, along with a rasher of smoked bacon. No oil was required because of the oil which came from the chorizo.

Once hot, I added a julienned red onion, and turned down the heat after a couple of minutes. Cooked slowly for ten to fifteen minutes, stirring occasionally, until the onion became semi-transparent.

The beans were fridge leftovers, and were heated in a separate small pan. Once ready, they were decanted onto a slice of wheat-free toast (not buttered in this case). Quick to prepare, and easy.

Lorne Sausage Breakfast

Normally I prepare scrambled egg on buttered toast (wheat-free) when I want a cooked breakfast. But sometimes you want something more calorific.

Two slices of lorne sausage, cooked slowly under glass for 17 minutes altogether, and turned twice. Plus a bread pudding with raisins, and a slice of black pudding (with no cinammon), cooked for the same length of time, and turned once.

The quartered cherry tomatoes and the mushrooms were cooked in a small knob of butter, in a small lidded pan, for about twelve minutes. The beans came out of a tin, because making them from scratch is an interesting thing to learn, but a pain to do.

Serve with freshly ground black pepper!

Lorne Sausage with Vine Tomato

Lorne sausage, cooked in its own fat for around 12 minutes, and turned once, served with a potato scone, halved vine tomatoes, and squirts of ketchup.

Also good with fried white onion. The following day I fried both the onion and the tomatoes under glass. Delicious!

Black Pudding, with Mushrooms and Tomatoes

A simple breakfast dish - two slices of black pudding, and a rasher of crispy smoked bacon, cooked at a medium heat in a skillet. Plus quartered mushrooms, chopped cherry tomatoes and a diced spring onion, cooked in a little sunflower oil in an omelette pan.

The black pudding slices were cooked first, in total for fourteen minutes, seven on each side. After five minutes, the rasher of bacon was also added to the skillet, and turned once. Both items were cooked in their own fat.

The vegetables were cooked for ten to twelve minutes, and stirred frequently.

The vegetables and the black puddings were served on top of a lightly toasted (and unfolded) seeded flat bread. The dish was dressed in freshly ground black pepper, and a pinch of basil. Delicious!

Egg and Bacon with Hash Browns and a Seeded Flatbread

Another variation on a British breakfast. What they serve you in hotels often seems to be an attempt to kill you on the spot (sausages, black pudding, deep fried potato bread, etc.). Less is more.

I started with the raw potato slices (semi skinned), which were fried in a large flat non-stick pan, altogether for about twenty minutes at a medium heat, and turned a couple of times.

After the first ten minutes I added two strips of smoked bacon, which were cooked to the point where the fat sizzled, and were also turned a couple of times.

Next the quartered mushrooms were added, along with half a dozen halved cherry plum tomatoes. All cooked at a medium heat, and not under glass.

I toasted a seeded and folded flatbread in a toaster (pre-damped), and placed it on the serving plate. The egg was added to the flat pan three minutes before all the other elements of the meal were decanted to the serving plate.

Served with a drizzle of American mustard, and some freshly ground black pepper!

Scrambled Egg and Bacon

Fabulous breakfast! The scrambled egg was made with two eggs, a pinch of salt, plus a quarter cup of whole milk, cooked slowly in a melted knob of salted butter. I used a small pan for that. Stirred about four or five times until ready.

The smoked bacon strips (two) were cooked slowly in an omelette pan in their own fat. Cooked until crispy at the edges.

Three quartered mushrooms were cooked slowly in the small amount  of bacon fat remaining, until they browned.

Served in this case with a squirt of American mustard and a dusting of black pepper.

Excellent served with buttered toast or slices of potato scone.

Full English Breakfast, with Chestnut Mushrooms

Smoked bacon and hash browns, served with fried tomatoes, chestnut mushrooms, toasted potato bread, and one fried egg, sunny side up. Add black pepper and tomato ketchup (or mustard, according to taste).

The mushrooms were cooked in butter in a separate pan, followed by the egg. Everything else was cooked in a medium sized skillet. The bacon was cooked first, and at a medium heat, then the chunks of boiled potato, and the tomato quarters.

An English breakfast now sometimes includes baked beans or tinned tomatoes, depending on where you are. The bacon sometimes is replaced with pork sausages.

Egg and Bacon, with Spelt and Buckwheat bread

Not wheat-free, with a spelt-buckwheat loaf under the bacon. But easy to substitute wheat-free bread. 

Egg and bacon is a reminder that it is not the end of the world if you have to change your diet if you have an intolerance to wheat, or have an immune response to gluten. Some delightful things you can still eat. 

This dish is made with strips of smoked bacon, hash browns, spring onions, mushrooms, tomatoes, a slice of toasted spelt and buckwheat bread, a fried egg, French's American mustard, and black pepper.
