Apple and Mango Fruit Salad


A simple and delicious fruit salad made with fresh slices of Gala apple, chopped mango (yellow and orange), plus black grapes. Kept in the fridge with some demerara sugar for a week, and turned occasionally.

Decanted into a bowl with the juice from the mango pieces, and dressed in some single cream.

No instructions really necessary here. Clementine segments, black grapes and cream. Add cinnamon if you wish.

Grape, Fig and Walnut Salad

Bargain green seedless grapes from the Co-op, plus figs and double cream from the fridge.

The semi-dried figs (about ten) were diced and added to the serving bowl along with two handfuls of the seedless grapes. Plus one handful of walnut pieces. Souse in half a measure of whisky (I used Bell's blended whisky), or some white wine, and stir together.

Add a drizzle of double cream.

Fantastic dish, which can be put together in less than two minutes!

Blueberry, Grape and Mango Fruit Salad

Mango and melon chunks, with seedless red  or green grapes, plus two handfuls of blueberries. Add to the dish.

Add eight dessert spoonfuls of double cream to the serving bowl (whipped or unwhipped according to preference), and a dessert spoonful of authentic maple syrup.

Simple, and completely delicious!

An alternative to the maple syrup is pomegranate molasses, if you have that to hand in your cupboard. A quite different flavour, but equally delicious with fruit and cream!

Red Onion and Salami Salad

A simple salami salad made with a quarter of a red onion, halved green seedless grapes, sliced yellow pepper, garlic, and shredded salad tomatoes. Plus, in this case, some roughly cut pieces of Wild Boar salami, though any salami sausage will do. Mixed together in a bowl, with some sunflower oil, tomato puree (just a dash), and two dashes of lemon juice. Allow to stand for an hour or so, stirring occasionally, and serve with black pepper.

Peppered Salami Salad

Four slices of German peppered Salami, cut into strips, two shredded salad tomatoes, a dozen halved black seedless grapes, two chopped spring onions, and half a green pepper, cut into strips. The salad was dressed in olive oil, a dash of lemon juice, and one squeeze of tomato puree. The mixture was stirred together in a glass bowl, and some coriander leaf, and oregano added. Decanted into a serving bowl, with a dusting of freshly ground black pepper.

Fruit Salad with Walnuts and Havana Rum

Chopped nectarine, plum, apple, banana, and grape, splashed with Havana Club rum (ideally leave the dish standing for a few hours after adding this), and a dash of nutmeg and cinnamon. Serve with double cream.
