Chicken Kiev with Pesto

Chicken Kievs from Sainsbury's with a variant pesto sauce.

Cooked in the middle of the oven for 21-25 minutes at 200 deg C, in an uncovered roasting tray (they weren't being cooked from frozen). Some of the oil came out, but the pesto sauce didn't. They were delicious. Watch them carefully during the last five minutes.

Though I didn't make them, they are easy to describe - usually whole or part pieces of chicken breast in a sauce and some cooking oil, coated in a mixture of breadcrumbs and flour.

Served in this case with topped and tailed green beans boiled with a little salt.

Jersey Milk Pancakes

Pancakes made with Jersey whole milk, two eggs, and pasta flour, topped with maple syrup. So not a wheat-free recipe. I normally use cornflour, which would make these pancakes wheat-free - the procedure is the same. 

Flour, eggs and milk mixed thoroughly in a measuring jug (you can use a handmixer in a bowl first), and poured into a small pan with a shallow level of sunflower oil at a high heat. 

Cook for a couple of minutes each side until ready (flipping if you are good at it. Otherwise a fish-slice will do). Serve immediately. Delicious!

Wheat Free Bread

Made with Dove's Farm wheat free flour (ground rice, potato, tapioca and natural gum), plus two eggs, sugar, salt, Jersey milk, quick yeast, and vinegar. Delicious.
