Fig, Date and Cashew Salad


Fruit salad made with diced fresh figs from Sainsbury's, stoned Deglet Nour dates, unsalted cashews, mixed in a Greek yoghurt. Two minutes to prepare, and delicious! Works well also with almonds instead of cashews. Also good with a dash of cinnamon.

Apple and Fig Salad, with Pomegranate Molasses, and Single Cream

A straightforward fruit salad, with chopped apple and figs, soused in pomegranate molasses for a couple of hours, stirring occasionally. You can add some white wine also, if you wish.  Once decanted into the serving bowl, add the single cream, and stir. Delicious!

Wild black rice & fig salad

Black rice, chopped green pepper, carrot, spring onion, vine tomato, dried fig, black pepper, olive oil. Drizzled with pressed lime juice & shredded ginger.
 I'm learning a lot about how my camera responds to colours. In tungsten or fluorescent lighting it converts to something like a daylight rendering (which is great). However green, purple and magenta are poorly represented. In real daylight it overdoes blue.
