Feta Cheese salad, with Pasta


A simple salad with feta cheese and two varieties of olives, dressed in olive oil. Diced tomatoes, dressed in some chives and black pepper, diced spring onions, grated carrot, plus cooked wheat-free pasta (ten minutes cooking time, with some turmeric). Drain, and allow to cool.  Then dusted with some smoked paprika. Quick to make.

Green and Black Olives with Feta Cheese


Simple dish bought from the local Co-op. Green and Black stoned olives in olive oil, with feta cheese and the herbs oregano and rosemary. Cheaper than assembling the ingredients myself separately.

Omelette Tortilla, with Sweet Chilli Hummus

I first encountered egg tortillas in 2007, in San Antonio, Texas, which is not so far away from the Mexican border. It is a great way to make a filling meal in a short space of time. It is an analogue to a number of meal formats found elsewhere in the world, and in Britain (Cornish pasties, Scottish bridies, etc.), which wrap food up in some form of bread or pastry.

I've included some earlier versions on this blog in which I used egg as the basis of the filling: Mexican Scrambled Egg Wrap, and Spanish Omelette Wrap.

This one is a little different, in that the commercially available tortilla wraps used were made with an infusion of sweet potato and feta cheese (sourced from Aldi).

I beat two eggs in a bowl, and added about 50 mls of water, which makes the omelette flexible after frying. The omelette (salted, and with a little paprika and white pepper) was cooked in a little butter in an omelette pan. At first at a high heat, but immediately turned down to nothing. After five minutes the omelette was turned, and cooked for another five minutes at the lowest heat (currently I cook with an electric hob which has a high degree of latent heat in the metal hobs. With a gas hob, you don't need to anticipate how hot the hobs will be in advance).

While the omelette was cooking, I smeared the surface of the tortilla with a sweet chilli hummus.

The omelette was then decanted onto the tortilla, the sides were folded in; the ends were sealed, and the tortilla was rolled. The tortilla was cut in two at 20 degrees with a sharp knife. Ready to eat, and delicious!

Feta Cheese Salad

A Feta cheese salad made with turmeric rice, tomatoes, garlic, olive oil, red onion, spinach, spring onion, yellow pepper, Feta cheese, and some herbs (Oregano).

The rice was cooked and allowed to cool. Then the rice was added to a glass bowl, along with a diced four leaf lettuce salad, plus diced spinach leaves, diced red onion, diced spring onion, and diced yellow pepper, and chopped baby plum tomatoes.

The dish was augmented with a pinch of coriander, and a pinch of oregano. Drizzled in some olive oil, which was stirred through.

Finally, about 75 grams of Feta cheese was cut into strips, and then cut into squares, and added to the mix. Stir thoroughly before serving.

Served with freshly ground black pepper.

Rocket and Feta Salad

Fresh Rocket leaves, garlic, yellow pepper, spring onion, Feta cheese, stuffed olives, olive oil, lemon juice, and ground black pepper. 

Wash the rocket, and rub the plate (in this case a pasta bowl) with a clove of garlic. Chop the garlic into thin slices, and dice. Add the rocket leaves to a mixing bowl, and add a little olive oil. Chop up a third of a yellow pepper, one spring onion, and about 40g of Feta cheese. Add all the vegetables and the cheese to the mixing bowl. Add the stuffed olives. All to stand for ten minutes or so. Stir again and decant the contents of the mixing bowl into the serving bowl. Add two splashes of lemon juice, and dress with black pepper.

Feta Cheese and Rocket Salad

Feta cheese, pitted olives, turmeric rice, chopped red pepper, vine tomato, baby leaf rocket salad, olive oil dressing, crushed garlic, black pepper and a twist of lemon. That might be worth doing with spelt grain instead of, or in addition to the rice.

Stuffed Cherry Pepper salad

Cherry peppers stuffed with Feta and Mizithra cheese, green olives stuffed with pimientos, chopped iceberg lettuce, dressed in olive oil and a little vinegar, chopped onion, finely chopped chives, chopped green pepper. Chopped spinach leaves would be a good addition to this dish, and enhance the Greekness of the combo. Serve with black pepper. 

The stuffed cherry peppers were bought in Aldi's. In addition to the peppers and the cheese, a range of herbs have been added, However this isn't a wheat free recipe, because there is some wheat starch present in the stuffed peppers (at a very low level). A quick and easy meal.

 Feta cheese, spinach, rocket and watercress, chopped vine tomato, red pepper and spring onion, dressed with lemon juice and olive oil. Plus black pepper, and  finely chopped garlic. . Horiatiki salata without the olives and cucumber.
