Prawns, Rice and Coriander
Steamed prawns and rice, with diced yellow peppers and onion (twenty minutes). Dressed in Soy and Chilli sauce, plus diced coriander leaf. Can be served hot or cold. Delicious!

Lamb Steaks with Turmeric Rice, Ginger, Spinach and Coriander
Lamb leg steaks unexpectedly available from the local co-op. Half steamed in a lidded pan for forty minutes with some olive oil, and turned once. Great smell in the kitchen. Served with turmeric'd basmatic rice mixed with grated fresh ginger, plus diced spinach leaves and coriander. Absolutely delicious.

Rice, with Torunska Stew
I found my ice-cream scoop, and was able to produce balls of turmericed rice and coriander once again. This was an interim dish, using up existing ingredients from the fridge. Served with fresh spinach.

Beef and Chickpea Curry
Excellent beef curry, made with ground Scotch beef. The chickpeas were softened in a slow cooker over several hours, and the beef was browned in a flat pan in a little olive oil for an hour and a half at a low to medium heat. I added diced mushrooms, a red chilli, and a julienned red onion.
Water was added to the beef along with the chickpeas, and was simmered for a couple of hours, after which the herbs and spices were added. The Madras curry powder was the most important of these.
Served with some fresh coriander, Basmati rice, and Pataks Lime pickle.

Serrano Ham Salad
Another easy salad, with thinly sliced Serrano ham, a baby leaf lettuce salad, and fresh coriander. Plus sliced white onion and garlic, boiled potato and sweet potato. Dressed in some freshly ground black pepper and a drizzle of olive oil on the greens.

Smoked Pork and Leek Soup
I added a generous amount of boiling water (about one pint).
I diced about 200g of the pork trimmings and added them to the pot about half an hour later. Cooked at a medium heat under glass for at least 90 minutes.
Completely delicious!

Pan-fried pork loin steak (ten minutes on each side), served with fresh coriander leaf, diced tomato, and spinach leaves. Dressed in American mustard.

Chicken, Tomato, Coriander, Chicken Stock
Easy to make and delicious dish. Chicken breast roasted in a casserole dish for about forty minutes (watch by eye). With stir-fried tomato and a chicken gravy. Dressed in some dried tarragon and served with fresh coriander.

Ardenne Pate Salad
Some great Ardenne pate from Aldi while I was waiting for a bus, plus some useful looking tomatoes. Served with cold boiled potato, a dash of dried basil, and some fresh coriander. The tomatoes were quartered. Delicious!

Sweet Potato, Chicken and Coriander
The sweet potato wedges were roasted in the oven at 180 deg C., dressed in a little olive oil, for about 35 minutes (check progress by eye, and turn once). The chicken was cooked in a skillet for about twenty five minutes at a low heat under glass, along with a green chilli. Turn once and check progress by eye.
Served with fresh coriander leaves.
Ham salad with Red Pepper
Rolled breaded ham dressed in American mustard. Served with a diced pointed red pepper, diced baby plum tomato, and a poached egg. The red pepper was dressed in a little dried coriander. Ten minutes, start to finish.

Chorizo and Green Beans
A simple stir-fry based on chorizo sausage and green beans. Cooked slowly for 25 minutes. The Chorizo was added to the skillet first (for ten to fifteen minutes) to release some of the oils and fat to cook the other ingredients. Serve dressed in coriander.

Coriander Chicken
The chicken breast was cooked in a casserole dish in the oven for thirty minutes at 180 deg C. Dressed in some sea salt and a drizzle of olive oil. The cover was removed and the chicken was cooked for a further twenty minutes, with the addition of a little white wine.
The vegetables were cherry tomatoes, green beans from Egypt, and diced carrot. All in some tomato puree, with a little salt. Cooked for about twenty-five minutes. Diced coriander was added during the final ten minutes.

Vegetable Pie
A simple vegetarian potato pie, made with carrots, red pepper, and spring onion.
The vegetables were parboiled for fifteen minutes, as were the potatoes. Added to a pie dish, while the potatoes were added to a pyrex bowl and mashed with salted butter.
The potato topping was added to the pie dish, and textured with a fork. Cooked in the oven for around fifty minutes at 180 deg C (judge progress by eye).

Thick Cut Bacon with Peppers in a Tomato Salsa
Half a 400g tin of chopped tomatoes, in which diced carrot, red pepper, and orange pepper strips were cooked at a medium heat for a couple of hours under glass.
The bacon pieces were cooked in a little olive oil for about twenty-five minutes, drained, and added to the vegetable salsa.
Add some white wine, a dash of bloody mary spice, the herbs and a pinch of paprika. No added salt or stock. Delicious!

Ground beef, browned and then simmered for two hours under glass, with herbs and paprika, plus diced onion, served with boiled semiskinned potatoes, and diced and boiled sugar snap peas.

Shepherd's Pie
Cooked on the middle shelf of an oven preheated to 190 degrees C, until it begins to brown. Which should be around an hour or a little longer. Watch carefully by eye, particularly if you don't have an accurate oven thermometer.
