Red Camargue Rice and Spinach Soup

Red Camargue rice and spinach soup. The rice was boiled for 30 minutes, then rinsed. Added chopped leek and whole spinach leaves, chicken stock and black pepper. Added tarragon, rosemary (pinch), and a little dried coriander.
