Garlic Sausage, Onion, and Chestnut Mushroom


A simple dish, made with deskinned garlic sausage, white onion (diced), and chopped chestnut mushrooms. Pan fried for fifteen minutes, and then cooked in water and tomato puree along with Basil and Oregano. Served with boiled basmati rice. 

 

Rhubarb Pie


I confess I bought this delicious rhubarb pie from Sainsbury's. I could have made one myself if I'd had the ingredients, but there it was in front of me. Rhubarb is popular in Scotland, particularly in conjunction with ginger (rhubard and ginger jam, rhubarb and ginger chutney, etc). 

Served with honey infused Greek style yoghurt.

Garlic Sausage Casoulet


A straightforward casoulet made with chunks of Polish garlic sausage, along with red pepper, potato, diced onion, fresh coriander, and diced flat mushroom. With a little red chilli. Cooked originally with sunflower oil. The gravy was thickened with a dessert spoonful of arrowroot powder. 

 

Tandoori Masala Bean Curry


A bean curry with fried diced potato and half of a red pepper. The simplest way to make this curry is to start with half a tin of baked beans, and add a dessert spoonful of Tandoori Masala powder. Stir thoroughly, and cook at a medium heat. 

The potato pieces and the diced red pepper were fried separately in sunflower oil under glass for twenty minutes, also at a medium heat.

Smoked Bacon, Mushrooms, and Baked Beans with Coriander


A simple dish of pan fried smoked bacon, cooked for about twelve minutes, and turned occasionally. With button mushrooms in the same pan, and similarly turned. 

The beans were prepared in a separate saucepan, and laced with freshly diced coriander. Fabulous dish. No added oil.

Black Pudding and Bacon Breakfast


Low fat black pudding and bacon breakfast, with parboiled and grilled chipped potatoes. The black pudding slices were cooked at a lowish heat in a lidded pan along with two strips of smoked bacon, without any added cooking oil. The puddings and the bacon were turned once. The halved baby plum tomatoes wee added after seven minutes. Cooked altogether for about twelve minutes. 

The chipped potatoes were started first, parboiled for ten minutes, and then grilled until browned, with a drizzle of sunflower oil and a sprinkling of salt. Judge progress by eye! Twenty minutes or so, depending on the grill.

MacSween Haggis, with Potato, Carrot and Coriander


I've been experimenting with the ingredients  of the basic haggis dish. This time, instead of using turnip or swede as a component, I used semi-mashed carrots, dressed in a little coriander leaf. Works pretty well if you don't have a turnip available. 

So, I steamed half a MacSween haggis, along with the potato pieces and the carrot. Half an hour all told, before serving the dish.

Smoked Bacon, Baby Plum Tomato, and Spring Onion Breakfast


Great breakfast, which is simple to prepare. Baby plum tomatoes, diced into three pieces, halved button mushrooms,and spring onion, cooked slowly in a skillet for 25 minutes in some sunflower oil. Stirred frequently. 

The cured and smoked bacon was also cooked slowly, but in another smaller pan, until it was on the edge of being crispy. 

The chipped potatoes were parboiled for ten minutes, and then grilled in the oven with a little sunflower oil until browned (turn once). Watch progress by eye. Served with tomato ketchup.

Ham, Egg & Chips


Sometimes only comfort food will do for lunch. Three slices of outdoor-reared breaded ham, with grilled chips, and two fried eggs. 

The chipped potatoes were first steamed for ten minutes (equivalent to parboiling), and then grilled (dressed in some sunflower oil) until browned (turned once). Served with some American (or German) mustard. Delicious!

Hoisin Chicken


Diced (pre-roasted) chicken breast, deseeded red chillies, chopped, diced garlic (one clove), two chopped spring onions, cooked in a drizzle of sunflower oil at a medium heat. Cooked for the last ten minutes in a little water and a teaspoonful of Hoisin sauce.. Served with slow cooked basmati rice (twenty minutes).

A simple ham salad, with breaded ham dressed in American mustard, along with a potato and spring onion salad in mayonnaise. Plus a side serving of cooked but cold green beans.

Beef Chilli with Garlic and Coriander Naan


Sometimes it s good to have a beef chilli on top of a piece of naan bread rather than with rice. The chilli was prepared in the usual way (browned first, and then boiled under glass for between forty minutes and an hour), with some beef stock and diced and deseeded chilli. 

The naan bread was toasted in a standard toaster.  

 


 

Lorne Sausage Breakfast


 Two slices of Lorne Sausage, cooked slowly in sunflower oil under glass, and turned once. Cooked alongside julienned white onion, and quartered Moroccan tomatoes. Cooked for twenty minutes all told. Dressed in freshly ground black pepper.

Tarragon Chicken in a Cream, Onion and Mushroom Sauce


Chicken breasts roasted in an open casserole dish for 40 minutes at 190 deg C, and then another fifteen minutes lidded. With a little sunflower oil. Dressed in some sea salt. Cooked a mixture of julienned white onions (two), plus five destalked and diced chestnut mushrooms, for twenty minutes in sunflower oil.

Decanted the onion and mushroom into a small pan, and mixed with a couple of dessert spoonfuls of single cream, and a shake of dried tarragon. Lots of freshly ground black pepper. 

Served with green beans boiled in salted water for seven minutes.
