Paprika Chicken and Brocolli Spears


 Chicken Breast, roasted in the oven for 40 minutes at 200 deg C, wrapped in aluminium foil with diced white onion. Dressed in sea salt, paprika, and a drizzle of olive oil. Served with Brocolli spears boiled for seven minutes. Plus some black pepper.

Noodles and Mushrooms


 A simple dish of egg noodles and diced white mushrooms. Noodles from the far east, so they just required to be soaked in a covered dish of boiling water for five minutes, along with the chilli sauce. The mushrooms were cooked in a separate pan at a medium heat.

Cubed Beef and Pasta


 Cubed Scotch beef, cooked for an hour and a half in a lidded pan at a medium heat, with olive oil. The green beans and spinach were cooked for ten minutes along with some dried rosemary in a separate pan. The wheat free pasta was cooked in a third pan for ten minutes or so at a medium heat. Fabulous meal!

Alcatraz Breakfast (with chicken and black bean sauce)


 Noodles were an important part of the diet of prisoners in Alcatraz (checkout Clint Eastwood's 'Escape from Alcatraz'). Why? No idea really, though it was an easy thing to cook for breakfast. The prisoners would have received a proper meal later in the day. 

I started with the chicken and black bean sauce and added the noodles. Five minutes to prepare the noodles. Stirred together. Delicious!

Chicken Salad with Olives


 The chicken was roasted in a casserole dish with a dressing of paprika for about forty-five minutes at about 200 deg C. Turned once. Allowed to cool before being diced and mixed with mayonnaise. 

The baby leaf salad was dressed with olive oil and with a dash of lemon juice.

Chicken, Tomato, Coriander, Chicken Stock


 Easy to make and delicious dish. Chicken breast roasted in a casserole dish for about forty minutes (watch by eye). With stir-fried tomato and a chicken gravy. Dressed in some dried tarragon and served with fresh coriander.

Onion Borscht


 A borscht made with white and red onion, along with diced beetroot which had been soused in malt vinegar. Cooked with one chilli to add extra bite. 

Ardenne Pate Salad


 Some great Ardenne pate from Aldi while I was waiting for a bus, plus some useful looking tomatoes. Served with cold boiled potato, a dash of dried basil, and some fresh coriander. The tomatoes were quartered. Delicious!

Sweet Potato, Chicken and Coriander


 The sweet potato wedges were roasted in the oven at 180 deg C., dressed in a little olive oil, for about 35 minutes (check progress by eye, and turn once). The chicken was cooked in a skillet for about twenty five minutes at a low heat under glass, along with a green chilli. Turn once and check progress by eye.

Served with fresh coriander leaves.  

Ham salad with Red Pepper


 Rolled breaded ham dressed in American mustard. Served with a diced pointed red pepper, diced baby plum tomato, and a poached egg. The red pepper was dressed in a little dried coriander. Ten minutes, start to finish. 

Black Olive and Parsnip Salad


Simple dish with whole black olives (destoned), spiralised parsnip, and a crunchy lettuce salad in a spoonful of mayonnaise. If you don't have a spiraliser, grating the parsnip would do just as well.

Chorizo and Black Olive Omelette


 Excellent breakfast omelette made with diced mushrooms and chorizo sausage, plus halved stoned black olives. 

The chorizo was cooking first in a skillet, and most of the oil in the cooking came from the sausage. Cooked for at least twenty minutes at a middling heat. Then I added the mushroom and the halved olives. The omelette mixture (beaten egg with a little water) was added after another fifteen minutes and cooked until the surface of the omelette became firm. 

Slid out of the skillet onto the plate. Delicious!

Cod Fishcakes with Brussels Sprouts and Mushrooms


Cod fishcakes cooked on the middle shelf of the oven for 18 minutes at 190 deg C.
The mushrooms were fried in a skillet, and the sprouts were boiled for eight to ten minutes under glass.

Chorizo and Green Beans


 A simple stir-fry based on chorizo sausage and green beans. Cooked slowly for 25 minutes. The Chorizo was added to the skillet first (for ten to fifteen minutes) to release some of the oils and fat to cook the other ingredients. Serve dressed in coriander. 


Ham and Mushroom Omelette


A basic pan-fried omelette, with mushrooms, green pepper, diced green beans, and cured ham (any variety of ham will do in fact). First the ham was cooked slowly in a little olive oil along with the mushrooms and the diced pepper and beans.

The egg (plus a little water) was added, and the omelette was cooked slowly under glass (along with a little tarragon) until it was ready.
 

Scrambled Egg with Chorizo de Leon


 A simple breakfast dish made with caramelised onion (cooked first in olive oil), diced courgette (half), baby plum tomatoes, and diced chorizo sausage. Chorizo de Leon is a variety from north western Spain which uses less in the way of preservatives (and takes longer to make). Allow the chorizo to cook for fifteen minutes. 

The egg was beaten in a bowl with a little water before being added to the skillet. Two minutes and it is ready. Delicious!
