Hot peppers with Ricotta Cheese

A delicious meal, constructed from a ready made salad from the local Co-op, consisting of a couple of varieties of lettuce, thin strips of carrot, chopped cucumber, and two salad tomatoes. Supplemented by a couple of spoonfuls of mayonnaise, and topped with hot red peppers stuffed with ricotta cheese. The oil which the peppers came in (garlic and herb infused) was drizzled over the salad leaves. Served with freshly ground black pepper.
